The 2021 Gundlach Bundschu Cabernet Sauvignon is the winery's signature cool-climate Cabernet, sourced primarily from the historic Rhinefarm Estate Vineyard in Sonoma Valley. The estate sits on the southwest slopes of the Mayacamas Mountains, where rocky volcanic soils, maritime breezes, and long daylight exposure help create concentrated fruit while preserving vibrant structure. Gundlach Bundschu has farmed this land for more than 160 years, making it one of California's most historic family-owned wineries.

**The 2021 vintage was marked by low yields and exceptional quality, producing a small but concentrated crop with richness and depth. A blend led by Cabernet Sauvignon with Merlot, Petit Verdot, and Malbec, the wine was aged for 18 months in 100% French oak, 50% new. Aromas and flavors of black currant, blackberry, cocoa nibs, dark chocolate, graphite, cedar, and earthy notes are framed by firm, dusty tannins and fresh acidity. Powerful and structured with excellent aging potential, it pairs beautifully with Korean short ribs, grilled steak, roasted meats, aged cheeses, or fresh cherries.
